Easy and Refreshing Citrus Salad with Avocado

1 large Bibb Lettuce head
2 handfuls of arugula
2 blood oranges
2 cara cara oranges
2 mandarins or tangerines
2 avocados
2 small shallots
1 cucumber
Handful Fresh mint or parsley
1/3 cup walnuts

Dressing
1/4 cup lemon juice
2 tbsp extra virgin olive oil
1 tsp Dijon mustard
1 tbsp honey
½ tsp salt

To make the dressing: In a small bowl, whisk together the orange juice, lime juice, vinegar, honey, and mustard. While whisking, stream in the olive oil. Taste and adjust for seasoning with salt and adjust for sweetness with honey.

Assemble the salad: Peel and slice into small segments the blood oranges, cara cara oranges, mandarins or tangerines, and avocados. Thinly slice the shallots, cucumber, and mint or parsley. Separate the leaves of the lettuce. Layer lettuce with arugula, oranges, avocado, shallots, cucumber and fresh herbs. Top with walnuts. Drizzle with dressing and serve immediately. Enjoy!
