4 pounds of chicken thighs, skin-on and bone-in
4 teaspoons lemon zest (about 2 lemons)
1/4 cup lemon juice
1/4 cup chicken broth
2 cloves garlic, crushed
2 tablespoons fresh chopped thyme
2 teaspoons fresh chopped rosemary
1 teaspoon salt
1 teaspoon pepper
2 tablespoons olive oil
Lemon slices for garnish
Place lemon juice, chicken broth, lemon zest, garlic, thyme, rosemary, salt, pepper, and olive oil in a large bowl and mix well.
Place the chicken in the bowl and coat with the marinade. Place in the refrigerator and marinate for at least one 1 hour or longer if you’d like.
Preheat the oven to 425°F. Remove chicken from marinade and place in a single layer in a large baking dish, skin side up. Keep the marinade.
Bake for 20 minutes and baste the chicken with the marinade. Baking for another 20 minutes (a total of about 45 minutes), until the chicken is cooked through with an internal temperature of 165°F.
Remove chicken from the oven and let rest for 10 minutes before serving. Serve with steamed rice and vegetables. Enjoy!
